Nettle is understood, by both traditional Chinese medicine practitioners and western medicine dietitians, to be a great tonic. Here’s a recipe for making a tasty nettle soup.
Ingredients: 1 onion peeled and chopped; 2 large potatoes, peeled and chopped into half-inch cubes; 2 pints of vegetable or chicken stock; 175 g of nettles (only pick the tips and use gloves); 1 tablespoon of vegetable oil; salt & pepper to season.
Method:
- (Wearing rubber gloves) wash the nettles and drain in a colander
- Warm the oil in a saucepan, add the onions, and gently cook until softened
- Add the potato, nettles, and stock
- Bring to a simmer and cook gently for about 15 minutes until the potato is soft
- Remove from the heat and blend to the desired consistency
- Finally, season with the salt and pepper
